Instead of just repinning into a black hole, I am actually trying to recreate some pins. Recently I took on the Doritos Bake I pinned. She called it Mexican Chicken Casserole, but I call it Doritos Bake...because let's call a spade a spade. I was a little concerned because the poster listed it under trash food, because it has no nutritional value. But I must say, it was a huge success at our house. I made a few tweaks to the recipe, so here is my version.
Mexican Chicken Casserole via Jam Hands
2 c. shredded cooked chicken
1 c. shredded cheese (or more, you know you want too)
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
3 oz. cream cheese
1 can Ro-tel tomatoes (we used MILD for the kids)
1/2 packet taco seasoning
Bag of Doritos
1. Pre-heat oven to 350-f degrees.
2. In a mixing bowl, combine all ingredients except doritos.
3. In a greased 2 qt baking dish, put a layer of crushed doritos (about 2 cups), then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese, cover, and bake for 30-35 minutes, till bubbling hot.
The whole family loved it, and I even divided it and took some down to the neighbors. All the men said it would be good to mix up the flavors of Doritos, maybe throw in some Cool Ranch. So next time I think I will try to mix it up.
